A quick and delicious chicken fried rice recipe perfect for a weeknight dinner.

- 2 cups cooked rice (preferably day-old)
- 1 cup diced chicken breast
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 2 green onions, chopped
Instructions
- Heat vegetable oil in a large pan over medium-high heat.
- Add diced chicken and cook until browned and fully cooked.
- Push chicken to one side, pour beaten eggs into the pan, and scramble.
- Add carrots, peas, and garlic. Stir-fry for 2 minutes.
- Add cooked rice, soy sauce, sesame oil, and black pepper. Mix well.
- Cook for another 3 minutes, stirring frequently.
- Garnish with green onions and serve hot.
Notes
- Use day-old rice for best texture.
- Adjust soy sauce to taste.
- You can add other vegetables like bell peppers or corn.
