A quick and delicious chicken fried rice recipe perfect for a weeknight dinner.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup diced chicken breast
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped

Instructions

  1. Heat vegetable oil in a large pan over medium-high heat.
  2. Add diced chicken and cook until browned and fully cooked.
  3. Push chicken to one side, pour beaten eggs into the pan, and scramble.
  4. Add carrots, peas, and garlic. Stir-fry for 2 minutes.
  5. Add cooked rice, soy sauce, sesame oil, and black pepper. Mix well.
  6. Cook for another 3 minutes, stirring frequently.
  7. Garnish with green onions and serve hot.
