Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup broccoli, chopped
- 1 cup spinach
- 1 bell pepper, diced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil.
- Add quinoa, reduce heat, and cover. Cook for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add broccoli, spinach, and bell pepper. Sauté for 5 minutes.
- Fluff quinoa with a fork and combine with vegetables.
- Season with salt and pepper. Serve warm.
Notes
- Feel free to add your favorite vegetables.
- Can be served warm or cold.
- Store leftovers in the fridge for up to 3 days.
