Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup broccoli, chopped
  • 1 cup spinach
  • 1 bell pepper, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil.
  3. Add quinoa, reduce heat, and cover. Cook for 15 minutes.
  4. In a pan, heat olive oil over medium heat.
  5. Add broccoli, spinach, and bell pepper. Sauté for 5 minutes.
  6. Fluff quinoa with a fork and combine with vegetables.
  7. Season with salt and pepper. Serve warm.
