Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together pumpkin puree, sugar, brown sugar, and vegetable oil until well combined.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Chill the dough for at least an hour to help maintain shape during baking.
- Use a cookie scoop to portion out the dough onto a lined baking sheet.
- Bake in the preheated oven for 10-15 minutes, or until the edges are set.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Once cooled, spread cream cheese frosting on the flat side of one cookie and sandwich with another cookie.
