Delicious pumpkin muffins topped with a sweet streusel crumble.
Ingredients

- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1/4 cup water
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Line muffin tin with paper liners.
- Mix flour, sugars, baking soda, salt, and spices in a large bowl.
- In another bowl, whisk pumpkin puree, oil, eggs, and water.
- Combine wet and dry ingredients until just mixed.
- Fill muffin cups 3/4 full with batter.
- Sprinkle streusel topping over each muffin.
- Bake for 20-25 minutes until toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to wire rack.

- Use fresh pumpkin puree for best flavor
- Store in airtight container for up to 3 days
- Freeze muffins for up to 1 month
