Description

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/4 cup water
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tin with paper liners.
  2. Mix flour, sugars, baking soda, salt, and spices in a large bowl.
  3. In another bowl, whisk pumpkin puree, oil, eggs, and water.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill muffin cups 3/4 full with batter.
  6. Sprinkle streusel topping over each muffin.
  7. Bake for 20-25 minutes until toothpick comes out clean.
  8. Cool in pan for 5 minutes, then transfer to wire rack.
