Ingredients

- 1 cup ricotta cheese

- 1 egg

- 2 cups all-purpose flour
- 3 eggs
- 1 tbsp olive oil
- 1/4 cup butter
- Fresh sage leaves
Instructions
- Mix pumpkin puree, ricotta, Parmesan, egg, nutmeg, salt, and pepper in a bowl.
- Combine flour, eggs, and olive oil to make dough. Knead until smooth.
- Roll dough into thin sheets. Place small spoonfuls of filling on one sheet.
- Cover with another sheet and press around filling to seal. Cut into ravioli.
- Boil ravioli for 3-4 minutes until they float.
- Melt butter in a pan, add sage, and cook until fragrant. Toss ravioli in the sauce.
