Ingredients

- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 large egg
- 2 cups all-purpose flour

- 1 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Mix pumpkin, sugar, oil, and egg in a bowl.
- In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients.
- Fold in chocolate chips.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes.
- Cool on a wire rack before serving.
Notes
- Use canned or homemade pumpkin puree.
- Store in an airtight container for up to 5 days.
- For crispier cookies, flatten slightly before baking.
