Soft and chewy pumpkin chocolate chip cookie bites packed with warm spices and melty chocolate.
Ingredients

- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp pumpkin pie spice
- 1/4 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup pumpkin puree
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
- Cream butter and sugar until fluffy. Mix in pumpkin and vanilla.
- Gradually add dry ingredients to wet mixture. Fold in chocolate chips.
- Scoop 1-tbsp portions onto the baking sheet. Bake for 10-12 minutes.
- Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- Store in an airtight container for up to 5 days.
- Dough can be frozen for later baking.
