Description

Delicious pumpkin chocolate chip cheesecake bars combine the flavors of pumpkin pie and cheesecake with chocolate chips for a perfect fall dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into an 8×8 inch baking pan.
  3. Bake crust for 8 minutes. Let cool.
  4. Beat cream cheese and 1/2 cup sugar until smooth.
  5. Add pumpkin puree, eggs, vanilla, and pumpkin pie spice. Mix well.
  6. Stir in chocolate chips.
  7. Pour filling over crust. Bake 30-35 minutes until set.
  8. Cool completely before cutting into bars.
