- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into an 8×8 inch baking pan.
- Bake crust for 8 minutes. Let cool.
- Beat cream cheese and 1/2 cup sugar until smooth.
- Add pumpkin puree, eggs, vanilla, and pumpkin pie spice. Mix well.
- Stir in chocolate chips.
- Pour filling over crust. Bake 30-35 minutes until set.
- Cool completely before cutting into bars.
Notes
- Use full-fat cream cheese for best texture.
- Chill bars for at least 2 hours for cleaner cuts.
- Store in refrigerator for up to 5 days.
