Description

Ingredients

  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup water
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix oil, sugar, eggs, pumpkin puree, and water until smooth.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Pour half the batter into the loaf pan.
  6. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  7. Spread cream cheese mixture over the batter in the pan.
  8. Pour remaining batter over the cream cheese layer.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.
