Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix coconut milk and sugar until combined.
- Add flour, baking powder, and salt to the mixture.
- In a separate bowl, beat the eggs and vanilla extract.
- Combine the wet and dry ingredients, then fold in grated coconut.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until golden brown.
- Let cool before serving.
Notes
- Serve with a sprinkle of powdered sugar on top.
