- 1 prime rib roast (about 5–7 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare, about 1.5 to 2 hours.
- Remove from oven and let it rest for 20-30 minutes before slicing.
