A classic prime rib for your Christmas dinner.
Ingredients

- 1 prime rib roast (5–7 pounds)
- 3 tablespoons kosher salt
- 2 tablespoons black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 tablespoons olive oil
- Fresh rosemary and thyme (optional)
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the prime rib with olive oil, then season with salt, pepper, garlic powder, and onion powder.
- Place the roast in a roasting pan with the bone side down.
- Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (163°C).
- Cook until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
- Remove from the oven and let it rest for 20-30 minutes before carving.
Notes
- For best results, use a meat thermometer.
- Letting the meat rest allows juices to redistribute.
- Serve with horseradish sauce or au jus.
