Description

A classic prime rib for your Christmas dinner.

Ingredients

Scale
  • 1 prime rib roast (57 pounds)
  • 3 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons olive oil
  • Fresh rosemary and thyme (optional)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the prime rib with olive oil, then season with salt, pepper, garlic powder, and onion powder.
  3. Place the roast in a roasting pan with the bone side down.
  4. Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (163°C).
  5. Cook until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
  6. Remove from the oven and let it rest for 20-30 minutes before carving.

Notes

  • For best results, use a meat thermometer.
  • Letting the meat rest allows juices to redistribute.
  • Serve with horseradish sauce or au jus.
