Ingredients

- 4 medium potatoes, diced
- 2 carrots, chopped
- 1 onion, diced
- 3 cups vegetable broth
- 1 cup green beans, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add onions and garlic, sauté until soft.
- Add diced potatoes and carrots, stir for a few minutes.
- Pour in the vegetable broth, bring to a boil.
- Add green beans and thyme, reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Blend if you prefer a creamy texture or serve as is.
Notes
- Adjust the thickness of the soup by adding more or less broth.
- Top with fresh herbs or croutons for added texture.
