Ingredients

  • 2 tablespoons butter

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add diced potatoes and vegetable broth, bring to a boil.
  4. Reduce heat, cover, and simmer until potatoes are tender.
  5. Puree the soup using an immersion blender or in batches in a regular blender.
  6. Stir in milk, season with salt and pepper.
