A hearty and comforting potato soup made in a crock pot using frozen potatoes.
Ingredients

- 4 cups frozen diced potatoes
- 1 onion, chopped
- 3 cups vegetable broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
Instructions
- Place frozen potatoes and chopped onion in the crock pot.
- Add vegetable broth and garlic powder.
- Cook on low for 6-8 hours or high for 3-4 hours.
- When potatoes are tender, mash them slightly with a potato masher.
- Stir in milk and cheese until melted.
- Season with salt and pepper to taste.
Notes
- For a creamier texture, blend the soup after cooking.
- Garnish with green onions or extra cheese if desired.
