Ingredients

- 4 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt, to taste
- Pepper, to taste
- Chives, for garnish
Instructions
- Place diced potatoes, onion, and garlic in the crock pot.
- Add vegetable broth and season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, blend the soup until smooth.
- Stir in heavy cream and cheddar cheese.
- Garnish with chives before serving.
Notes
- Adjust the thickness by adding more broth.
- For a vegan option, use coconut cream and nutritional yeast.
