Crispy and delicious potato skins made easily in the air fryer, perfect for a snack or appetizer.
Ingredients

- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/4 cup sour cream
- 2 green onions, sliced
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them several times with a fork.
- Cook the potatoes in the air fryer for 15-18 minutes, or until tender. Let cool slightly.
- Once cool, cut the potatoes in half lengthwise and scoop out some of the flesh, leaving a small border.
- Brush the inside of each potato skin with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper.
- Place the potato skins in the air fryer basket, skin side down, and cook for 5-7 minutes or until crispy.
- Remove from the air fryer and sprinkle with shredded cheddar cheese and bacon bits.
- Return to the air fryer for an additional 2-3 minutes, or until cheese is melted.
- Serve topped with sour cream and green onions.
Notes
- Feel free to customize toppings with your favorite ingredients like jalapeños or avocado.
- Store leftover potato skins in an airtight container in the fridge for up to 3 days.
