Description

Crispy and delicious potato skins made easily in the air fryer, perfect for a snack or appetizer.


Ingredients

Scale
  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them several times with a fork.
  3. Cook the potatoes in the air fryer for 15-18 minutes, or until tender. Let cool slightly.
  4. Once cool, cut the potatoes in half lengthwise and scoop out some of the flesh, leaving a small border.
  5. Brush the inside of each potato skin with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper.
  6. Place the potato skins in the air fryer basket, skin side down, and cook for 5-7 minutes or until crispy.
  7. Remove from the air fryer and sprinkle with shredded cheddar cheese and bacon bits.
  8. Return to the air fryer for an additional 2-3 minutes, or until cheese is melted.
  9. Serve topped with sour cream and green onions.

Notes

  • Feel free to customize toppings with your favorite ingredients like jalapeños or avocado.
  • Store leftover potato skins in an airtight container in the fridge for up to 3 days.
