  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until onion is translucent.
  3. Add carrots and potatoes, stir for a few minutes.
  4. Add lentils, vegetable broth, cumin, turmeric, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  6. Check lentils and potatoes for tenderness.
  7. Adjust seasoning if needed.
