Ingredients

- 4 cups diced potatoes
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 cup shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix diced potatoes, onions, bell peppers, and half of the cheese.
- In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.
- Combine the potato mixture with the egg mixture.
- Pour the mixture into a greased baking dish.
- Top with the remaining cheese.
- Bake for 45 minutes or until the eggs are set and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add cooked sausage or bacon for extra flavor.
- You can prepare the casserole the night before and bake it in the morning.
- Store leftovers in the refrigerator for up to 3 days.
