Ingredients

  • 4 cups diced potatoes
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix diced potatoes, onions, bell peppers, and half of the cheese.
  3. In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.
  4. Combine the potato mixture with the egg mixture.
  5. Pour the mixture into a greased baking dish.
  6. Top with the remaining cheese.
  7. Bake for 45 minutes or until the eggs are set and the top is golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add cooked sausage or bacon for extra flavor.
