Ingredients

- 2 lbs Beef Chuck shoulder, diced
- 4 cups green chiles, roasted and chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced Beef and brown on all sides.
- Add onion and garlic, sauté until soft.
- Stir in green chiles, broth, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Adjust seasoning if needed and serve hot.

- Serve with tortillas or rice.
- Can be frozen for later use.
