Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup pineapple chunks
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic powder, ginger powder, salt, and pepper.
  4. Add rice, chicken broth, and soy sauce. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Add pineapple chunks and cook for another 5 minutes.
  7. Remove from heat and let sit for 5 minutes before serving.
