- 4 chicken thighs, bone-in and skin-on
- 1/4 cup olive oil
- 1/4 cup white vinegar
- 2 tablespoons soy sauce
- 2 tablespoons garlic, minced
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions
- In a bowl, whisk together olive oil, white vinegar, soy sauce, garlic, cumin, paprika, black pepper, salt, and lime juice to create the marinade.
- Place the chicken thighs in a resealable plastic bag or a dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
- Remove the chicken from the marinade and discard the marinade.
- For grilling: Place the chicken on the grill, skin-side down, and cook for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C).
- For roasting: Place the chicken skin-side up on a baking sheet and roast in the oven for about 35-45 minutes or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill or oven and let rest for 5 minutes before serving.
- Garnish with fresh cilantro and serve with your favorite sides.
