- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 potatoes, diced
- 4 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown them on all sides, about 5 minutes.
- Add chopped onion, carrots, and celery. Sauté for 5 minutes.
- Stir in diced tomatoes, beef broth, potatoes, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes, or until beef and vegetables are tender.
- Remove the bay leaf before serving.
Notes
- For a thicker soup, mash some of the potatoes before serving.
- You can add green beans or peas for extra vegetables.
- Store leftovers in the fridge for up to 3 days.
