A hearty and nutritious vegetable beef soup that’s perfect for a comforting meal. Packed with vegetables and tender beef, this soup is both filling and flavorful.


Ingredients

  • 1 lb beef stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 potatoes, diced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown them on all sides, about 5 minutes.
  3. Add chopped onion, carrots, and celery. Sauté for 5 minutes.
  4. Stir in diced tomatoes, beef broth, potatoes, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until beef and vegetables are tender.
  6. Remove the bay leaf before serving.

Notes

  • For a thicker soup, mash some of the potatoes before serving.
  • You can add green beans or peas for extra vegetables.
  • Store leftovers in the fridge for up to 3 days.
