Ingredients

- 2 medium beets, peeled and diced

- 1/4 cup chopped walnuts
- 1 cup arugula
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced beets with olive oil, salt, and pepper.
- Roast beets for 25 minutes until tender.
- Let beets cool for 5 minutes.
- In a bowl, mix roasted beets with arugula.
- Drizzle with balsamic vinegar.
- Sprinkle feta cheese and walnuts on top.
- Serve immediately.
