Ingredients

  • 1 cup plain yogurt
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1/4 cup red onion, finely sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, mix yogurt, lemon juice, olive oil, salt, and black pepper.
  3. Add cooked pasta, cucumber, bell pepper, and red onion to the bowl.
  4. Toss everything together until well coated.
