Ingredients

- 8 oz whole wheat pasta
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions.
- In a large pan, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute.
- Add mixed vegetables and Italian seasoning.
- Cook until vegetables are tender, about 5-7 minutes.
- Drain pasta and add it to the pan with vegetables.
- Mix well and season with salt and pepper.
- Serve hot, garnished with fresh basil.

- Feel free to use any seasonal vegetables.
- Adjust the seasoning based on your preference.
- Can add nutritional yeast for a cheesy flavor.
