Description

A delicious and colorful pasta primavera casserole loaded with fresh vegetables and cheese.


Ingredients

  • 8 oz. pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package directions. Drain and set aside.
  3. In a large bowl, mix cooked pasta with mixed vegetables, marinara sauce, ricotta cheese, and Italian seasoning.
  4. Spread half of the pasta mixture in a greased baking dish.
  5. Sprinkle half of the mozzarella and Parmesan cheese over the mixture.
  6. Add the remaining pasta mixture and top with the remaining cheese.
  7. Bake for 25-30 minutes until cheese is bubbly and golden.

Notes

  • Use any seasonal vegetables you prefer.
  • Can substitute marinara with Alfredo sauce for a creamier dish.
