Description
A delicious and colorful pasta primavera casserole loaded with fresh vegetables and cheese.
Ingredients

- 8 oz. pasta
- 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package directions. Drain and set aside.
- In a large bowl, mix cooked pasta with mixed vegetables, marinara sauce, ricotta cheese, and Italian seasoning.
- Spread half of the pasta mixture in a greased baking dish.
- Sprinkle half of the mozzarella and Parmesan cheese over the mixture.
- Add the remaining pasta mixture and top with the remaining cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden.
Notes
- Use any seasonal vegetables you prefer.
- Can substitute marinara with Alfredo sauce for a creamier dish.
- Store leftovers in an airtight container in the fridge for up to 3 days.
