- 2 boneless, skinless chicken breasts
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 egg, beaten
- 1 tbsp olive oil
- 1 bunch asparagus, trimmed
Instructions
- Preheat oven to 400°F (200°C).
- Mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper in a shallow dish.
- Dip chicken breasts in beaten egg, then coat evenly with the Parmesan mixture.
- Heat olive oil in an oven-safe skillet over medium heat. Sear chicken for 2-3 minutes per side until golden.
- Place skillet in the oven and bake for 15-20 minutes until chicken is cooked through.
- Toss asparagus with olive oil, salt, and pepper. Roast in the oven alongside chicken for the last 10 minutes.
- Serve hot.

- Use freshly grated Parmesan for best results.
