A simple and tasty pancake casserole made with frozen pancakes.
Ingredients

- 10 frozen pancakes
- 4 eggs
- 2 cups milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup blueberries (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a baking dish with cooking spray.
- Arrange frozen pancakes in the baking dish.
- In a bowl, whisk together eggs, milk, maple syrup, vanilla, and cinnamon.
- Pour the egg mixture over the pancakes.
- Sprinkle blueberries on top if using.
- Bake for 25-30 minutes until set.
- Let cool for a few minutes before serving.
Notes
- Serve with extra syrup if desired.
- You can add other fruits or toppings.
- Store leftovers in the refrigerator.
