Description
A delicious pancake casserole made in a crockpot.
Ingredients

- 2 cups pancake mix
- 1 1/2 cups milk
- 2 eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup blueberries (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- In a large bowl, mix the pancake mix, milk, eggs, maple syrup, and vanilla extract until smooth.
- Fold in blueberries or chocolate chips if using.
- Grease the crockpot with cooking spray.
- Pour the batter into the crockpot.
- Cover and cook on low for 4 hours.
- Check for doneness before serving.
Notes
- Serve with additional maple syrup.
- Store leftovers in the refrigerator.
- Can be reheated in the microwave.
