Ingredients

  • 4 cod fillets (6 oz each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the cod fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the cod fillets to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the cod from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook for 30 seconds until fragrant.
  5. Stir in the lemon juice and lemon zest, cooking for an additional minute.
  6. Return the cod to the skillet and spoon the lemon butter sauce over the top.
  7. Garnish with fresh parsley and serve immediately.
