Ingredients

  • 1 cup pumpkin puree
  • 1 1/2 cups milk
  • 4 eggs
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp butter (melted)
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Grease a 9×13-inch baking dish.
  2. Spread the cubed bread evenly in the dish.
  3. In a bowl, whisk together pumpkin puree, milk, eggs, brown sugar, vanilla, pumpkin pie spice, cinnamon, and salt.
  4. Pour the mixture over the bread, pressing lightly to soak.
  5. Drizzle melted butter on top. Cover and refrigerate overnight.
  6. Preheat oven to 350°F (175°C).
  7. Sprinkle pecans on top if using. Bake for 45-50 minutes.
  8. Let cool slightly before serving.
