- 8 oz pasta (any short shape)
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add mushrooms and sauté for 5 minutes until golden.
- Add garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth and heavy cream, then stir in pasta.
- Bring to a boil, then reduce heat and simmer for 12-15 minutes until pasta is cooked.
- Stir in Parmesan, salt, pepper, and thyme until creamy.
- Serve immediately.
