Ingredients

  • 1 cup (200g) long-grain white rice
  • 2 cups (480ml) chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken thighs with salt, pepper, and paprika, then add to the pan. Cook for 5 minutes per side until browned.
  3. Remove chicken and set aside. In the same pan, sauté onion and garlic for 2 minutes until softened.
  4. Add rice, thyme, and chicken broth. Stir to combine.
  5. Return chicken to the pan, cover, and simmer for 20 minutes until rice is tender and chicken is fully cooked.
  6. Let rest for 5 minutes before serving.
