- 1 lb (450g) boneless, skinless chicken thighs
- 1 cup (200g) long-grain white rice
- 2 cups (480ml) chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Season chicken thighs with salt, pepper, and paprika, then add to the pan. Cook for 5 minutes per side until browned.
- Remove chicken and set aside. In the same pan, sauté onion and garlic for 2 minutes until softened.
- Add rice, thyme, and chicken broth. Stir to combine.
- Return chicken to the pan, cover, and simmer for 20 minutes until rice is tender and chicken is fully cooked.
- Let rest for 5 minutes before serving.
Notes
- Use basmati or jasmine rice for better texture.
- Adjust broth quantity if using brown rice.
- Garnish with fresh parsley for extra flavor.
