- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried thyme
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F.
- In a large bowl, toss potatoes with 1 tbsp olive oil, salt, pepper, garlic powder, and paprika.
- Arrange potatoes in a single layer on a baking sheet.
- In the same bowl, coat chicken with remaining olive oil and thyme.
- Place chicken on the baking sheet with potatoes.
- Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- For crispier potatoes, broil for 2-3 minutes at the end.
- Use chicken thighs if you prefer darker meat.
- Cut potatoes into even sizes for uniform cooking.
