Ingredients

  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, toss potatoes with 1 tbsp olive oil, salt, pepper, garlic powder, and paprika.
  3. Arrange potatoes in a single layer on a baking sheet.
  4. In the same bowl, coat chicken with remaining olive oil and thyme.
  5. Place chicken on the baking sheet with potatoes.
  6. Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
  7. Garnish with fresh parsley before serving.
