Ingredients

- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 small red onion, sliced
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, thyme, and garlic powder.
- Add chicken to the skillet and cook for 5-6 minutes per side until golden and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, add balsamic vinegar and honey. Stir to combine.
- Return chicken to the skillet, add tomatoes and onion, and cook for 2-3 minutes until the sauce thickens.
- Serve hot with your choice of sides.
Notes
- Use a meat thermometer to ensure chicken reaches 165°F internally.
- Adjust honey for a sweeter or tangier glaze.
- Substitute chicken thighs if preferred.
