Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, sliced

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, thyme, and garlic powder.
  3. Add chicken to the skillet and cook for 5-6 minutes per side until golden and cooked through.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add balsamic vinegar and honey. Stir to combine.
  6. Return chicken to the skillet, add tomatoes and onion, and cook for 2-3 minutes until the sauce thickens.
  7. Serve hot with your choice of sides.
