These Old-Fashioned Rhubarb Bars feature a buttery shortbread crust that perfectly complements the tart rhubarb filling, creating a delightful dessert that brings back memories of home baking.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 1/4 teaspoon salt
- 4 cups fresh rhubarb, chopped
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the flour and salt, mixing until a dough forms. Press this dough into the bottom of the prepared baking dish to form the crust.
- In another bowl, combine the chopped rhubarb, brown sugar, eggs, vanilla extract, baking powder, and cornstarch. Mix until well combined.
- Pour the rhubarb mixture over the shortbread crust in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the filling is set and lightly browned.
- Remove from the oven and let cool completely before slicing into bars.
Notes
- For best results, use fresh rhubarb. If using frozen rhubarb, thaw and drain excess moisture before using.
- These bars can be stored in an airtight container at room temperature for up to 3 days.
