  • 1 teaspoon baking powder
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the flour and salt, mixing until a dough forms. Press this dough into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, combine the chopped rhubarb, brown sugar, eggs, vanilla extract, baking powder, and cornstarch. Mix until well combined.
  5. Pour the rhubarb mixture over the shortbread crust in the baking dish.
  6. Bake in the preheated oven for 35-40 minutes, or until the filling is set and lightly browned.
  7. Remove from the oven and let cool completely before slicing into bars.

Notes

  • For best results, use fresh rhubarb. If using frozen rhubarb, thaw and drain excess moisture before using.
