Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, oats, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk pumpkin puree, brown sugar, oil, milk, egg, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Pour batter into the loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use canned or homemade pumpkin puree.
- Store in an airtight container for up to 5 days.
- For extra texture, add walnuts or raisins.
