Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, oats, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk pumpkin puree, brown sugar, oil, milk, egg, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into the loaf pan.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.

  • Use canned or homemade pumpkin puree.
