Ingredients

- 2 cups oat flour
- 3 ripe bananas, mashed
- 1/2 cup honey or maple syrup
- 1/3 cup melted coconut oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed bananas, honey, melted coconut oil, eggs, and vanilla extract.
- In another bowl, combine oat flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- This bread freezes well.
