- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup strawberry preserves
Instructions
- In a medium bowl, mix together graham cracker crumbs, melted butter, and granulated sugar until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside.
- In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour the cream cheese mixture over the prepared crust and spread evenly. Refrigerate for at least 4 hours, or until set.
- Once set, top with sliced strawberries and drizzle with strawberry preserves before serving.
Notes
- For a more intense strawberry flavor, you can blend some of the strawberries into the cream cheese mixture.
- Make sure to let the cheesecake set completely in the refrigerator for the best texture.
