Ingredients

  • 1/4 cup granulated sugar
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup strawberry preserves

Instructions

  1. In a medium bowl, mix together graham cracker crumbs, melted butter, and granulated sugar until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside.
  3. In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  5. Pour the cream cheese mixture over the prepared crust and spread evenly. Refrigerate for at least 4 hours, or until set.
  6. Once set, top with sliced strawberries and drizzle with strawberry preserves before serving.

Notes

  • For a more intense strawberry flavor, you can blend some of the strawberries into the cream cheese mixture.
  • Make sure to let the cheesecake set completely in the refrigerator for the best texture.
