- 1 bell pepper, diced

- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the quinoa mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
