Ingredients

  • 2 tablespoons of lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a bowl, combine cherry tomatoes, cucumber, and bell pepper.
  6. Add cooled quinoa to the vegetable mixture.
  7. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Pour dressing over the quinoa salad and mix well.
  9. Garnish with fresh parsley.
