Instructions

  1. Rinse black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until soft.
  4. Add soaked peas, water, ham hock, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Remove ham hock, shred the meat, and return it to the pot.
  7. Simmer for an additional 30 minutes.
  8. Serve warm.

Notes

  • For a vegetarian option, omit the ham hock.
