- 1 cup arborio rice
- 4 cups warm broth
- 2 cups fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Heat a large pan over medium heat and add butter.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and sliced mushrooms, cooking until mushrooms are tender.
- Add arborio rice to the pan and stir for 1-2 minutes until the rice is slightly toasted.
- Pour in a ladle of warm broth and stir until absorbed.
- Continue adding broth one ladle at a time, stirring frequently until absorbed before adding more.
- After about 20 minutes, when the rice is creamy and al dente, stir in chopped thyme.
- Remove from heat and mix in grated Parmesan cheese.
- Season with salt and pepper to taste.
- Serve warm, garnished with additional thyme if desired.

- Always use warm broth when adding it to the rice to maintain cooking temperature.
