Description
A hearty mushroom potato soup that is rich in flavor.
Ingredients

- 2 cups mushrooms, sliced
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until softened.
- Add mushrooms and potatoes, cook for 5 minutes.
- Pour in the vegetable broth, bring to a boil.
- Reduce heat and simmer for 20 minutes until potatoes are tender.
- Stir in heavy cream, season with salt and pepper.
- Blend the soup until smooth, if desired.
- Serve hot.
Notes
- For a vegan version, replace heavy cream with coconut cream.
- Garnish with fresh parsley if desired.
