Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup chicken broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup chickpeas, rinsed and drained
  • 1/4 cup almonds, toasted
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large tagine or heavy pot over medium heat.
  2. Season the chicken thighs with salt and pepper, then add them to the pot, skin-side down. Brown the chicken for 5-7 minutes on each side until golden. Remove the chicken and set aside.
  3. In the same pot, add the onion and garlic, sautΓ©ing until softened, about 3-4 minutes.
  4. Stir in the cumin, coriander, cinnamon, ginger, turmeric, and paprika, cooking for another minute until fragrant.
  5. Add the diced tomatoes and chicken broth, stirring to combine. Bring to a simmer.
  6. Return the chicken to the pot, along with the chopped apricots and chickpeas. Cover and cook on low heat for about 40-45 minutes, or until the chicken is tender and cooked through.
  7. Once cooked, taste and adjust seasoning if necessary. Stir in the toasted almonds just before serving.
  8. Garnish with fresh cilantro and serve warm with couscous or bread.
