Description
A fragrant and flavorful Moroccan dish featuring chicken cooked with a blend of spices, vegetables, and dried fruits, all simmered to perfection in a traditional tagine.

- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup dried apricots, halved
- 1/2 cup olives, pitted and sliced
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a large tagine or heavy-bottomed pot, heat olive oil over medium heat. Add the chicken thighs, skin-side down, and brown on both sides. Remove and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Stir in the cumin, coriander, cinnamon, ginger, and cayenne pepper, cooking for another minute until fragrant.
- Add the diced tomatoes and chicken broth, stirring to combine. Bring to a simmer.
- Return the chicken to the pot, along with the dried apricots and olives. Season with salt and pepper.
- Cover the tagine and let it simmer on low heat for about 45 minutes, or until the chicken is cooked through and tender.
- Garnish with fresh cilantro or parsley before serving. Enjoy!
Notes
- Serve with couscous or crusty bread to soak up the delicious sauce.
- Feel free to add other vegetables like carrots or bell peppers for more flavor and nutrition.
- If you don’t have a tagine, a Dutch oven or heavy pot works just as well.
