Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup dried apricots, halved
  • 1/2 cup olives, pitted and sliced
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large tagine or heavy-bottomed pot, heat olive oil over medium heat. Add the chicken thighs, skin-side down, and brown on both sides. Remove and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Stir in the cumin, coriander, cinnamon, ginger, and cayenne pepper, cooking for another minute until fragrant.
  4. Add the diced tomatoes and chicken broth, stirring to combine. Bring to a simmer.
  5. Return the chicken to the pot, along with the dried apricots and olives. Season with salt and pepper.
  6. Cover the tagine and let it simmer on low heat for about 45 minutes, or until the chicken is cooked through and tender.
  7. Garnish with fresh cilantro or parsley before serving. Enjoy!

Notes

  • Serve with couscous or crusty bread to soak up the delicious sauce.
  • Feel free to add other vegetables like carrots or bell peppers for more flavor and nutrition.
  • If you don’t have a tagine, a Dutch oven or heavy pot works just as well.
