A moist and fragrant cherry almond upside-down cake with a caramelized cherry topping and almond-infused batter.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp almond extract
  • 1/2 cup milk
  • 2 cups fresh or frozen cherries, pitted
  • 1/4 cup brown sugar
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Mix melted butter and brown sugar, then spread evenly in the pan. Arrange cherries on top.
  3. In a bowl, whisk flour, almond flour, baking powder, and salt.
  4. Cream butter and sugar until fluffy. Beat in eggs one at a time, then add almond extract.
  5. Alternately add dry ingredients and milk to the butter mixture, mixing until smooth.
  6. Pour batter over cherries and spread evenly.
  7. Bake for 35-40 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes, then invert onto a serving plate.
