- 1 tsp baking soda
- 1 tsp ground cinnamon

- 3 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Add eggs, oil, grated carrots, and vanilla extract. Mix until well combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let it cool.
- For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Spread frosting over the cooled cake and cut into bars.

- For extra texture, add 1/2 cup chopped walnuts or pecans to the batter.
