Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup fresh strawberries, sliced
  • Additional strawberries for garnish
  • Whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
  3. Line a muffin tin with paper liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each liner to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Add the powdered sugar and vanilla extract to the cream cheese, mixing until well combined.
  6. Stir in the sour cream until fully incorporated.
  7. Spoon the cheesecake mixture over the crusts in the muffin tin, filling each liner about 3/4 full.
  8. Bake in the preheated oven for 18-20 minutes, or until the edges are set but the center is still slightly jiggly.
  9. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to set.
  10. Once chilled, top each mini cheesecake with sliced strawberries and a dollop of whipped cream if desired.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • These mini cheesecakes can be made a day in advance and stored in the refrigerator.
  • Feel free to substitute strawberries with other fruits like blueberries or raspberries.
